Trail Cooking Ingredients

Vegetables

Dried Beans
2 1/2 cup soaked beans = 1 1/2 cups dried beans.
Dried Carrots
4 cups sliced carrots = 1 cup dried carrot slices. 3 medium carrots = 1 cup.
To dry:
Do not use old carrots.
Slices - peel & cut into 1/8" to 1/4" slices. Steam blanch 3-4 minutes. Dip in solution of 2 Tbs cornstarch to 2 cups water. Dry until leathery.
Shreds - peel & shred. Steam blanch 2 minutes. Wash in solution of 2 Tbs cornstarch to 2 cups water. Dry until brittle.
Dried Celery
1 1/2 cups sliced celery = 2 Tbs of dried celery.
2 stalks of celery = 1 cup.
Dried Corn
1 lb frozen corn = 3 1/2 cups of frozen corn = 1 cup dried corn.
Dried Green Peppers
1 green pepper dries to 3 Tbs of dried green pepper. 1 lg green pepper = 1 cup chopped.
Dried Mushrooms
Dried Onion
1 sm onion = 1 Tbs dried onion. 1 small onion, chopped = 1/3 cup. 3 cups chopped weighs 1 pound.
To Dry:
cut into 1/4" slices. Rotate frequently until light and paper like.
Dried Potatoes
Instant hash brown potatoes.
Potato Flakes
6 cups of potato flakes weighs 1 pound.
Tomato Paste Leather
3/4 cup tomato paste (1 6 oz can), when dried to a leather and powdered makes roughly 6 Tbs of Powder. 6 oz tomato paste + 1 cup water = 2 cups tomato sauce.
Tomato
1 medium tomato = 1/2 cup chopped tomato.

Fruit

Dried Apples
 
Dried Lemons
1 medium lemon = 3 Tbs juice + 2 tsp shredded peel.
Raisins
2 3/4 cups weighs 1 pound.

Dairy

Butter
Clarified Butter will last a long time. It is known as ghee, and can be purchased in jars at an Indian grocery store. Make it by melting the butter, and separating the clear part. Clarified butter can withstand higher temperatures than normal butter and is good for frying. 2 cups of butter weighs 1 pound.
Butter is 80% fat and 20% water and milk solids. Clarified butter is all fat.
Powdered Buttermilk
1 Cup buttermilk = 1/4 cup dried buttermilk + 1 Cup water. 4 cups dried milk weighs 1 pound.
Powdered Milk
1 Cup Milk = 1/4 cup dried milk + 1 Cup water. 4 cups dried milk weighs 1 pound.
Real Milk consists of 87% water, 3.5% fat, 3.5% protein, 4.9% lactose, .7% minerals.
Cheese
 
 

Eggs & Substitutes

Powdered Egg Whites (Just Whites - Deb El)
1 egg white = 2 tsp powdered egg whites + 2 Tablespoons water.
Real Eggs
1 large real egg = 1/4 cup of egg (1 tbls yolk & 3 Tbls whites)
Powdered Eggs ( Wakefield - Milton G Waldbaum co)
1 egg = 1/4 cup mix + 1/4 cup water (for baking). This mix has extra oil & salt - use unsalted butter if using this mix.

 

Meat

Dried Ground Beef
1/4 pound of ground beef = 1/3 cup dried ground beef granules.
Dried Shrimp
Can be found at oriental food stores.
 

Grains

Cornmeal
3 cups of cornmeal weigh 1 pound. Cornmeal is low in gluten.
1 cup of cornmeal (122 g 433 cal 11.2 g protein 89.9 g carb. 4.8 g fat 2 g fiber)
Flour
4 cups of flour weighs 1 pound.
1 cup white flour (115 g 400 cal 13.0 g protein 87.0 g carb. 2.0 g fat 3 g fiber)
1 cup whole wheat flour (120 g 400 cal 16.0 protein 85.2 g carb. 2.4 g fat 11.5 g fiber)
Oatmeal
5 cups of oatmeal weighs 1 pound. High in protein, devoid of gluten.
Pasta, short goods
1 cup (3 1/2 oz) = 2 cups cooked.
Pasta, long goods
8 oz long goods = 4 cups cooked.
Popcorn
1/2 cup = 8 cups popped.
Rice
1 cup (7 oz) = 3 cups cooked.
Rice, quick
1 cup (3 oz) = 2 cups cooked.
 

Staples

Sugar
2 1/4 cups sugar weighs 1 pounds.
Water
Olive Oil
Good flavor, unsuitable for frying (high-temperatures).
Baking Powder
Use double acting.
Baking Soda
Walnuts
 

 

Spices

Dried Basil
Used with tomatoes, fish, pasta, pesto sauce, vegetables, stews.
Black Pepper
Cinnamon
Chili Powder
Used in Meats, soups, stews, and snacks.
Dill
Used with fish, cucumbers, and creamy soups and sauces.
Garlic Powder
1 clove garlic = 1/8 tsp garlic powder
Mustard
Used in creamy soups and sauces.
Oregano
Used with tomato and potato dishes, shrimp, grilled meats.
Parsley
Used with pasta, grain, or fish.
Dried Crushed Red Pepper
